Marinated Tofu and Broccoli Kebabs

Marinate the tofu in olive oil, lemon juice, and crushed red pepper to infuse it with bright, spicy flavor.

Ingredients

  • 1/4 cup olive oil, plus more for the grill
  • 1 package (14 ounces) extra-firm tofu, drained and cut into 1-inch pieces
  • 2 lemons, each cut into 8 wedges, plus 2 tablespoons lemon juice
  • 1/2 tsp crushed red pepper
  • 3 cups broccoli florets
  • 1/2 small red onion, cut into 1-inch pieces
  • kosher salt and black pepper

Instructions

  1. Heat grill to medium. Once it is hot, clean the grill grate with a wire brush. Just before grilling, oil the grill grate.
  2. Soak 8 skewers in water for at least 15 minutes.
  3. Toss the tofu, oil, lemon juice, and red pepper in a medium bowl. Marinate for at least 15 minutes and up to 8 hours. Add the broccoli, lemon wedges, onion, ½ teaspoon salt, and ¼ teaspoon black pepper to the tofu and toss to combine. Thread onto the skewers and grill, turning occasionally, until the broccoli is tender, 10 to 12 minutes.
