No – Cook Fresh Tomato Sauce with Pasta

Serve with 1 lb just cooked pasta – this sauce clings best to short, ridged types like penne, rigatoni, or orecchiette.

Ingredients

  • 1/4 cup extra virgin olive oil
  • 6 resh tomatoes, diced
  • 3 Tbsp balsamic vinegar
  • 3 cloves garlic, finely minced
  • Fresh basil, chopped (a good handful)
  • 4-5 leaves Fresh mint, chopped
  • Salt & Pepper to taste
  • Crushed red pepper (optional)
  • Grated Parmesan cheese (optional)

Instructions

In a large non-reactive bowl, combine tomatoes, garlic, olive oil and vinegar. Toss together with basil and mint. Season to taste with salt & pepper. Add crushed red pepper if you want to add a little “bite” to your sauce. Let sit at room temperature for at least 30 minutes and up to 3 hours. Serve with 1 lb just cooked pasta – this sauce clings best to short, ridged types like penne, rigatoni, or orecchiette.

Serve with grated parmesan or romano cheese, if desired.
