Tuscan Tortellini Soup

Tuscan Tortellini Soup

A classic Tuscan soup with tomatoes, vegetables, tortellini and red pepper flakes for a kick. Pair with our Herb Focaccia Bread!

Serves: 4

Ingredients

  • 2 Tbsp Canola Oil
  • 1 medium Onion, chopped
  • 2 tsp Garlic, chopped
  • 1/2 tsp Red Pepper Flakes
  • 1 (14.5 oz) can Vegetable Broth
  • 3 cups Water
  • 1 (14.5 oz) can Diced Tomatoes
  • 1 (16 oz) bag Frozen Vegetable Blend
  • 1 (15oz) can Cannellini Beans, drained and rinsed
  • 1 Tbsp Italian Seasoning
  • 1 (16oz) bag Frozen Cheese Tortellini
  • Salt and Pepper

Instructions

  1. In a large pot, heat the oil over medium heat and add onion, garlic, and red pepper flakes. 
  2. Sauté for 2 minutes, then add the beef broth and 3 cups of water. 
  3. Add all of the remaining ingredients, except the tortellini. 
  4. Bring to a boil and then reduce heat and let simmer for 5 minutes. 
  5. Add the tortellini and simmer until the tortellini are cooked. 
  6. Season with Salt and pepper to taste.
