Easy Crab Soup

Easy Crab Soup

A quick version when in a pinch!

Use green onion as a garnish only when not neutropenic.

Makes 4 servings


  • 1 onion, finely chopped
  • 2 Tbsp margarine
  • 2 Tbsp all-purpose flour
  • 1 3/4 cups canned fat-free chicken broth
  • 1 1/2 cups water
  • 1 (12-ounce) can evaporated skim milk
  • 1 lb lump or white crabmeat, picked for bones
  • 3 green onion stems (scallions), finely chopped, optional


In a saucepan, sauté onion in margarine until tender. Stir in flour and gradually add broth and water. Simmer for 20 minutes on low heat. Stir in milk. Fold in crabmeat. Garnish with green onion stems when not neutropenic.
