Vegetable Soup

Vegetable Soup

Warming and hearty. Makes 4 cups, each serving= 55 calories, 1 gm fat

Ingredients

  • 2/3 cup sliced carrots
  • 1/2 cup diced onions
  • 2 garlic cloves, minced
  • 3 cups chicken, beef or vegetable broth
  • 1 1/2 cup dices cabbage
  • 1/2 cup green beans
  • 1 Tbsp tomato paste
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/2 cup diced zucchini

Instructions

  1. In large saucepan, sprayed with nonstick cooking spray, sauté carrots, onion, and garlic over low heat until tender, about 5 minutes.
  2. Add broth, cabbage, beans, tomato paste, and spices.
  3. Bring to a boil.
  4. Lower heat and simmer, covered, about 15-20 minutes.
  5. Stir in zucchini and heat 3-4 minutes longer.
